Ingredients

Directions

1. Heat oil in a sauté pan over medium heat.
2. Add salsa and allow the onions and garlic to simmer in the liquid.
3. Add tomatoes, cilantro stems, coriander, cumin, and salt.
4. Allow to simmer until the tomatoes soften and basically melt into the sauce.
5. Transfer to a blender (or use a hand immersion blender) and puree until you reach the consistency of pea soup or thick tomato sauce.
6. Transfer to a bowl and garnish with cilantro leaves.
7. Note: would also work well as enchilada sauce or a base for vegetarian Spanish rice.
