Directions

1. In a pot, heat oil and cook onions until glassy. Add lentils and mix well. Add tomatoes, tomato soup and stock and bring to the boil.
2. Reduce heat, cover and simmer for 45 minutes or until lentils have broken down. Add coconut milk and chili sauce.
3. Reheat and season with salt and pepper.
