In a bowl, beat egg with a fork. Pour in melted butter while stirring. |

Mix in heavy cream, vanilla and water. |

Measure 1/4 cup baking mix (low carb if available). Pour into sifter and add baking soda and Splenda. Sift together.

Blend into wet ingredients with the fork. If consistency is too thick for pancakes and another tablespoon of water. |

Spray griddle with non-stick spray or butter lightly. Place approximately 2 tablespoons of batter for each pancake. |

Brown lightly on one side then flip and cook a few seconds more and brown as preferred. |

Serve with sugar free syrup and butter. |
