Slice mushrooms, chop bell pepper and red onion. |

In medium skillet combine turkey sausage, onion and bell peppers, cook over medium heat until all pink is gone. Reduce heat to low. |

In mixing bowl combine 6 large eggs and a dash of half and half, briskly whisk until combined. Pour mixture into skillet and add the sliced mushrooms. |

Cook on low for 10 minutes or until edges appear firm, transfer to oven and cook for 5 minutes or until apppears done. Remove from oven. |

Grate the parmesan cheese, sprinkle on top and enjoy! |
