Directions

1. Stir fry the onion in low fat cooking spray for 5 minutes.
2. Add the sliced carrots, vegetable stock and seasoning (salt and pepper) to taste.
3. Simmer for 15 minutes until the carrots are tender.
4. Add the chopped coriander.
5. Liquidize and serve.
